1. Heat Griddle to 375f or heat twelve inch skillet over medium heat. Grease with canola oil if necessary or use cooking spray before heating.
I am basically a beginner at cooking, I'm mostly a baker, so there will be a variety of different foods posted on this blog. Most the foods will be pretty simple and easy to follow.

Spinach & Rice Casserole
My Ingredients -
2 t. Olive Oil
3 Roma Tomatoes
2/3 C. shopped celery
Chopped Green Onions [ or 1 medium onion chopped ]
1 clove garlic - finely chopped
1 3/4 C water
1 Can of mushroom soup [ 98% reduced fat for healthy eating ]
1 6oz bag of fresh baby spinach - chopped
1 1/2 C uncooked brown rice
1 t. Italian Seasoning
1/2 t. pepper
1 C. diced cooked ham
3/4 C Shredded Cheddar Cheese
1/4 C. parmesan cheese
Directions -
1. Heat oven to 350 degrees F.
Spray 13x9 inch glass baking dish with cooking spray
2. In a 3 quart saucepan - heat oil over med heat.
Add tomatoes, celery, onion & garlic. Cook 5 minutes- stirring occassionally.
Add water & soup - heat to boiling.
Add Spinach, Rice, Italian Seasoning & Pepper - Return to Boiling
Remove from heat - Add ham, 1/4 C. of cheddar cheese & parmesan cheese.
Spread in baking dish
Cover in foil
3. Bake 30-35 minutes or until Bubbly
Sprinkle with remaining 1/2 C. cheddar cheese. Let stand uncovered 5 minutes or until cheese is melted. I added more then a half cup, sprinkle cheese on to your tastes.
